A classic, hearty meatloaf recipe with a simple, sweet, and savory brown sugar glaze, perfect for a comforting family dinner.

- 1 1/2 pounds ground chuck
- 2 large eggs, slightly beaten
- 1/3 cup milk
- 1 medium onion, diced small
- 1 teaspoon salt
- 1 teaspoon pepper
- 2/3 cup finely crushed saltine crackers or store bought bread crumbs
- 1 1/2 cups ketchup (for glaze)
- 1 tablespoon Worcestershire sauce (for glaze)
- 1/8 teaspoon pepper (for glaze)
- 3/4 cup light or dark brown sugar, packed (for glaze)
Instructions
- Preheat your oven to 350 degrees.
- Spray an 8 X 11 inch oblong baking dish with non stick cooking spray.
- Mix all meatloaf ingredients together in a large bowl using your hands. Do not over mix.
- Shape the mixture into a loaf and place it in the prepared baking dish. Set aside.
- Combine ketchup, Worcestershire sauce, pepper, and brown sugar in a small pan. Stir and heat over medium heat just until the sugar dissolves. This is your glaze.
- Brush about half of the sauce over the top of the meatloaf mixture. Reserve the remaining sauce.
- Place the meatloaf on a middle oven rack and bake for about one hour, or until the internal meat temperature reaches 160 degrees on a meat thermometer.
- Allow the meatloaf to rest for about ten minutes before slicing.
- Brush with additional sauce if desired, or serve the remaining sauce on the side.
- Refrigerate any leftovers.
Notes
- Mixing the meatloaf ingredients by hand works well, but stop mixing as soon as everything is combined to keep the meat tender.
- Use a meat thermometer to check for doneness; 160 degrees ensures the meat is cooked safely.
- This meatloaf pairs well with mashed potatoes and green beans for a traditional meal.
