- 1 lb raw shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 head broccoli, chopped
- 2 bell peppers, sliced
- 2 cups snow peas
- 4 garlic cloves, minced
- green onion for garnish
- 1/4 cup soy sauce (for sauce)
- 1/4 cup honey (for sauce)
- 2 tbsp cornstarch (for sauce)
Instructions
- Whisk the soy sauce, honey, and cornstarch together to make the sauce. Set the sauce aside.
- Heat 1 teaspoon of the oil in a large, deep skillet over medium heat. Add the shrimp and cook until pink, about 2 minutes per side. Remove the shrimp with a slotted spoon and set them aside.
- Add the remaining oil to the same skillet. Add the broccoli, peppers, and peas. Sauté until the peppers blister, 5 to 6 minutes.
- Add the minced garlic and the cooked shrimp to the skillet. Sauté for 1 additional minute.
- Reduce the heat to low. Pour in the prepared sauce and stir for 10 seconds, or until the sauce thickens and coats all ingredients.
- Top the stir-fry with green onion and serve over rice.
Notes
- This recipe works well served over rice or noodles.
- For a different texture, you can substitute the vegetables with others you prefer, such as carrots or mushrooms.
