- 2 Cups Nut Milk
Instructions
- Grind the chia seeds into a powder using a coffee grinder or similar appliance to achieve a mousse-like texture.
- Set the powdered chia seeds aside.
- In a glass jar, combine the powdered sweetener and cocoa powder.
- Use a hand blender to mix the sweetener and cocoa.
- Slowly pour the nut milk into the jar while continuing to mix the pudding base.
- Add the powdered chia seeds to the mixture; the pudding will thicken immediately.
- Use the hand mixer to blend until all powdered chia seeds are incorporated and no crumbles remain.
- Pour the pudding into serving containers. It will thicken more as it sets.
- When ready to serve, top with Greek yogurt or whipped cream.
- Sprinkle the top with raw cacao, berries, nuts, or sugar-free sprinkles as desired.
