Make this quick, single-serve keto cinnamon mug cake in minutes for a warm, low-carb breakfast or snack that tastes like a comforting treat.

- 1 tbsp unsalted butter, melted
- 1 large egg
- 3 tbsp superfine almond flour
- 1/2 tsp baking powder
- 1 tbsp erythritol sweetener granular
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 1/8 tsp ground cinnamon (for topping)
- 3/4 tsp brown sugar alternative (for topping)
- 1/2 tbsp unsalted butter, softened (for frosting)
- 1 tbsp cream cheese, softened (for frosting)
- 1 tbsp powdered erythritol (for frosting)
Instructions
- Add all cake ingredients to a microwave-safe mug (at least 8 oz capacity). Mix with a small whisk until the batter is smooth.
- In a small bowl, combine the topping ingredients. Whisk until blended. Sprinkle half of this mixture over the surface of the cake batter. Save the rest for a second cake.
- Cook the cake in the microwave at full power for 1 minute and 15 seconds to 1 minute and 30 seconds. Avoid overcooking to prevent the cake from becoming dry.
- While the cake cools slightly, place the softened butter and cream cheese for the frosting into a small microwave-safe bowl. Cover the bowl with a paper towel and heat briefly for about 8-10 seconds until soft. Do not overheat.
- Whisk the butter and cream cheese until smooth. Gradually add the powdered sweetener, 1/2 tablespoon at a time, whisking after each addition until the frosting is sweet and thick enough. You may use up to 1 tablespoon of powdered sweetener.
- Transfer the frosting to a piping bag or a zip-top bag with a small corner cut off. Pipe a swirl over the still warm cake. Enjoy the cake warm.
Notes
- This recipe makes one serving, but the topping and frosting recipes yield enough for two mug cakes.
- For the best texture, do not overcook the cake in the microwave.
- This mug cake is best eaten right after preparation while it is still warm.
