Description

Make these simple, no-bake fat bombs for a quick, high-fat, low-carb breakfast or snack option perfect for busy mornings and meal prepping.


Ingredients

  • 8 ounces cream cheese room temperature
  • 4 ounces butter room temperature
  • 5 tablespoons erythritol sweetener
  • 3 tablespoons heavy cream
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
  • Optional garnish: shaved dark chocolate

Instructions

  1. Use an electric mixer to beat the softened cream cheese and butter together until smooth.
  2. Add the erythritol, heavy cream, vanilla, and salt. Beat again until the mixture is smooth. Taste and add more sweetener if you want it sweeter.
  3. Set 24 mini muffin liners on a baking sheet or in mini muffin pans.
  4. Use a 1 1/2 tablespoon cookie scoop to portion the mixture into each liner, or pipe 1 1/2 tablespoon balls into the liners using a piping bag with a large tip.
  5. Shave dark chocolate over the top of each ball if you choose.
  6. Refrigerate for 2 hours, or until firm.
