- Heat the butter in a small non-stick skillet over medium heat. When the butter melts, add the chives. Cook for about 20 seconds; do not let the butter burn.
- Slowly pour the eggs into the skillet and let them sit, undisturbed, for about 30 seconds.
- Gently lift and fold the eggs with a spatula and stir lightly. Let sit again for about 30 seconds and stir again.
- Repeat the folding and stirring process until the eggs are just cooked.
- Serve warm.
