- 1 tablespoon butter – salted
- 1 large egg (for biscuit)
- 1 tablespoon coconut flour
- 1/4 teaspoon baking powder – gluten-free if needed
- Olive oil spray
- 1 large egg (for frying)
- 1 slice cheese – sharp cheddar
- 1 slice deli ham
Instructions
- Melt 1 tablespoon of butter in a microwave-safe bowl (3.5 – 4 inches wide) for about 30 seconds. Let it cool slightly.
- Mix the melted butter with 1 egg, 1 tablespoon of coconut flour, and 1/4 teaspoon of baking powder using a fork.
- Microwave the mixture on high for 90 seconds.
- Let the biscuit cool slightly, then carefully slice it into two pieces.
- Heat a nonstick skillet over medium heat and spray it with olive oil spray.
- Break 1 egg into the skillet. Cook on both sides until done to your preference.
- Place the two biscuit slices in the skillet and lightly brown them on each side.
- Assemble the sandwich: Place one biscuit slice on a plate, top it with cheese, ham, and the fried egg. Place the second biscuit slice on top. Serve right away.
