Make this easy, festive King Cake Cracker Candy for Mardi Gras or any celebration. It uses simple ingredients to create a sweet, buttery, and colorful treat.

- 40 saltine crackers
- 1 cup brown sugar
- 1 cup unsalted butter
- 1 teaspoon ground cinnamon
- 12 oz. bag white chocolate chips
- purple, yellow, and green sanding sugars
Instructions
- Preheat your oven to 400°F. Line a large rimmed baking sheet (16×11-inch) with parchment paper. You can spread butter on the bottom of the baking sheet to help hold the paper in place.
- Place the saltine crackers, salt side down, side-by-side in a single layer on the prepared baking sheet. Set aside.
- In a medium skillet, melt the brown sugar, butter, and cinnamon over medium heat. Once melted, increase the heat to medium high and bring the mixture to a boil. Let it boil for 3 minutes without stirring.
- Pour the hot toffee mixture over the crackers on the baking sheet. Use a rubber spatula to spread the mixture evenly. Bake for 7 minutes.
- While the crackers bake, melt the white chocolate chips in the microwave, stirring every 30 seconds until smooth. This usually takes about 2 minutes.
- Remove the pan from the oven, let it set for 30 seconds, then pour the melted white chocolate over the top and spread it evenly to cover completely.
- Decorate the top with the purple, yellow, and green sanding sugars, alternating colors in a diagonal pattern.
- Let the candy cool on the counter for a few minutes, then freeze for 30 minutes or until hardened. Alternatively, place it in the refrigerator until hard.
- Remove the candy from the cold and crack it into bite-sized pieces. Store the candy in an airtight container at room temperature or in the refrigerator for up to 2 weeks.
Notes
- Melt the white chocolate chips separately in the microwave before pouring over the toffee layer for the most consistent coverage.
- You can find purple, yellow, and green sanding sugar in stores that carry baking products, such as Hobby Lobby, Michael’s, or Walmart.
- If you cannot find the colored sanding sugar, you can make your own using granulated sugar and food coloring.
- Store the finished cracker candy in a covered container at room temperature or in the refrigerator; it keeps well for up to 2 weeks.
