Ingredients

  • 6 large russet potatoes
  • 1/4 cup unsalted butter
  • 4 oz cream cheese
  • 2/3 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups cooked and crumbled bacon
  • 1/4 cup diced green onions

Instructions

  1. Preheat your oven to 375°F. Grease a 9×13 casserole dish.
  2. Wash, peel, and dice the potatoes. Boil them until tender.
  3. Drain the potatoes and return them to the pot. Mix in butter, cream cheese, sour cream, and milk.
  4. Add garlic powder, salt, pepper, 1 1/2 cups cheese, and 1 cup bacon. Transfer to the casserole dish.
  5. Top with remaining cheese and bacon. Bake for 25-30 minutes.
  6. Remove from oven and sprinkle with green onions before serving.
