Description

Ingredients

  • 1/2 lb ground beef, 80/20
  • 1/2 lb ground sausage
  • 1/2 cup minced chicken livers or gizzards
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup all-purpose flour
  • 1 onion, diced
  • 1/2 cup celery, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 teaspoons cajun seasoning
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 2 bay leaves
  • 2 cups long-grain white rice or basmati rice
  • 4 cups low-sodium chicken broth
  • 1/2 cup chopped green onion
  • 1/4 cup fresh chopped parsley

Instructions

  1. Add ground beef, sausage, and liver to a large saucepan over medium heat. Season with salt and pepper. Cook, crumbling the meat with a wooden spoon, until browned.
  2. Stir in the flour. Add the onion, bell pepper, and celery and sauté for 2 minutes.
  3. Add the garlic, Cajun seasoning, cayenne, oregano, thyme, and bay leaves. Stir to combine all ingredients.
  4. Add the rice and chicken broth. Bring the mixture to a boil, then cover the saucepan. Reduce the heat to low and simmer for 20 minutes.
  5. Remove the saucepan from the heat and let it rest, covered, for 5 minutes.
  6. Remove the lid, gently fluff the rice with a fork, replace the lid, and let it rest for 5 more minutes.
  7. Serve the rice mixture garnished with chopped green onion and parsley.

Notes

  • For the chicken livers, you can omit them, substitute small uncooked, chopped pieces of chicken thighs, or stir in chopped cooked chicken at the end.
  • To make this in an Instant Pot: Use the sauté setting to brown the meat. Add and sauté the vegetables and spices. Add the rice and 2 cups of chicken broth. Cook on manual/high pressure for 4 minutes with a 10-minute natural release. Remove the lid, gently fluff the rice with a fork, replace the lid, and rest for 5 more minutes. Garnish with green onion and parsley before serving.
  • For quick preparation, chop all vegetables and measure the spices ahead of time. You can also cook the meats and store them in the refrigerator for a few hours before finishing the rest of the meal.
