Description

Ingredients

- 1 lb lean ground beef
- 1 shallot or 1/2 small onion, chopped
- salt and pepper, to taste
- 12 oz coleslaw mix
- 1 recipe homemade taco seasoning (see notes)
- 1/4 cup chicken broth, or beef broth, or water
- Toppings: guacamole, salsa, green onions, shredded cheese, tortilla chips, sour cream
Instructions
- Brown the ground beef with the chopped shallot or onion, salt, and pepper in a large skillet over medium-high heat.
- Drain excess fat if needed, then return the beef to the skillet.
- Add the coleslaw mix and season lightly with salt and pepper.
- Sauté until the cabbage is tender, about 3-4 minutes.
- Add the taco seasoning and broth or water, then mix everything to combine.
- Serve the mixture with your chosen toppings.
Notes
- For homemade taco seasoning: Combine 1 tablespoon chili powder, 1 teaspoon cumin, 1/2 teaspoon paprika, 1/2 teaspoon garlic powder, 1/4 teaspoon onion powder, and 1/4 teaspoon oregano.
