Instructions

  1. Cream the softened butter and granulated sugar in a large bowl until fluffy using a hand mixer.
  2. Add the eggs, vanilla extract, lemon zest, and almond extract. Beat until the mixture is well blended.
  3. Add the flour, baking powder, cinnamon, salt, and nutmeg. Beat until the mixture forms a firm dough.
  4. Cover the dough and chill it in the refrigerator for 30 minutes.
  5. Preheat your oven to 375 degrees F. Line two baking sheets with parchment paper.
  6. Remove the dough from the refrigerator. Roll the dough into 24 balls, each about 1 1/2-inches in size.
  7. Place the balls on the prepared baking sheets and press each one down slightly to flatten it.
  8. Bake in the preheated oven for 8 to 10 minutes, or until the bottom edges just start to turn golden.
  9. Remove the cookies from the pans and place them on a wire rack to cool completely before frosting.
  10. To make the frosting, mix the powdered sugar, 3 tablespoons of milk, softened butter, lemon juice, vanilla extract, and almond extract in a second bowl using the hand mixer.
  11. Add more milk, one tablespoon at a time, until the frosting reaches your desired consistency.
  12. Spread the frosting onto the cooled cookies.
  13. Sprinkle the frosted cookies with stripes of purple, green, and yellow sugar sprinkles.
  14. If using, hide the plastic baby in the frosting of one cookie, making sure to tell guests about the figurine.
