Description
A creamy, cozy Marry Me Chicken Soup made with tender chicken, sun-dried tomatoes, garlic, herbs, and Parmesan. Perfect for family dinners and chilly nights.
Ingredients
2 tbsp olive oil
1 ½ lbs boneless, skinless chicken thighs (or breasts)
1 tsp paprika
Salt and black pepper, to taste
1 small onion, chopped
3 garlic cloves, minced
½ cup sun-dried tomatoes, chopped
1 tsp dried oregano
½ tsp dried thyme
½ tsp dried basil
4 cups chicken broth
1 cup heavy cream (or half-and-half)
½ cup grated Parmesan cheese
2 cups fresh spinach (optional)
½ tsp red pepper flakes (optional)
Fresh basil or parsley, for garnish
Instructions
Season chicken with paprika, salt, and pepper.
Heat olive oil in a Dutch oven. Sear chicken on both sides until golden. Remove and set aside.
In the same pot, sauté onion and garlic until fragrant.
Stir in sun-dried tomatoes, oregano, thyme, and basil. Cook 1 minute.
Add chicken broth and return chicken to the pot. Simmer 20–25 minutes until chicken is cooked through.
Remove chicken, shred with forks, then stir back into the pot.
Add heavy cream and Parmesan cheese. Stir until smooth and creamy.
Mix in spinach and red pepper flakes if using.
Adjust seasoning to taste. Garnish with fresh basil or parsley. Serve hot.
