Ingredients

  • 3 tbsp olive oil

  • 2 garlic cloves, minced

  • 2 cups brown rice/quinoa/cauliflower rice

  • 1 cup roasted chickpeas

  • 1 cup cherry tomatoes

  • 1 cucumber, diced

  • ½ red onion, sliced

  • ½ cup kalamata olives

  • ⅓ cup feta cheese

  • ¼ cup parsley or dill

  • Tzatziki: yogurt, cucumber, lemon, garlic, dill

  • Lemon vinaigrette: olive oil, lemon, honey, garlic, oregano


Instructions
