- 1 cup uncooked rice
- 1 cup salsa
- 1 cup beef broth
- 1 can corn, drained
- 1 tsp cumin
- 1 tsp chili powder
- Salt, pepper to taste
- 1–2 cups shredded Mexican cheese blend
Instructions
- Brown the ground beef with cumin, chili powder, salt, and pepper in a skillet.
- Add the uncooked rice, salsa, beef broth, and drained corn to the skillet. Stir to combine.
- Cover the skillet and simmer for 18 minutes, or until the rice is fully cooked and liquid is absorbed.
- Transfer the beef and rice mixture to a baking dish.
- Top the mixture evenly with the shredded Mexican cheese blend.
- Bake at 350°F for 10–15 minutes, until the cheese is melted and bubbly.
- Garnish with fresh cilantro or sliced jalapeños before serving.
Notes
- You can substitute brown rice for white rice, but adjust the cooking time as needed for the rice to become tender.
- For added vegetables, mix in one cup of drained, diced green chiles or bell peppers with the corn.
