Mini Spinach and Cheese Pinwheels

Description

Make these easy, savory mini spinach and cheese pinwheels for a great party snack or appetizer.


Ingredients

  • 2 tbsp salted butter
  • 1 sweet onion diced
  • 1/2 tsp salt
  • 8 oz cream cheese softened
  • 8 oz frozen spinach
  • 1 tsp garlic powder
  • 2 sheets puff pastry
  • 1 cup cheese shredded (mozzarella, Colby jack, or cheddar)
  • 1 egg beaten

Instructions

  1. Pre-heat oven to 425°F.
  2. Melt butter in a skillet over medium heat, then add onions. Sear onions until they are softened and golden brown. Set aside.
  3. Thaw frozen spinach by submerging in warm water until they are no longer frozen. Drain water and pat the spinach dry with a paper towel to remove moisture.
  4. In a large bowl, mix cream cheese, spinach, caramelized onions, and garlic powder.
  5. Spread out one puff pastry sheet, then spread half the cream cheese spinach mixture evenly over the pastry, spreading to the edges, especially the top edge.
  6. Sprinkle with half of the shredded cheese over the cream cheese spinach mixture.
  7. Roll over the bottom of the puff pastry sheet to form a tube.
  8. Seal the tube close by pressing down on the seams of the puff pastry sheet.
  9. Using a serrated knife, slice the tube into 12 pieces of pinwheels.
  10. Place pinwheels at least 2 inches apart on a baking sheet lined with parchment paper or a greased baking sheet. Brush the top with egg wash.
  11. Repeat steps 4-9 using the other puff pastry sheet.
  12. Bake in the oven for 15 minutes. Bake in two batches if needed; do not overcrowd the baking sheet.
  13. Remove pinwheels from the oven and let them cool for a few minutes. Serve.

Notes

  • Try to remove as much moisture from the spinach as possible after thawing.
  • Do not overlap baking sheets in the oven when baking.
