Mint Chocolate Aero-Style Brownies

Description

Bake fudgy brownies with pockets of airy mint chocolate using this simple, nostalgic recipe perfect for sharing.


Ingredients

Scale
  • 200 g unsalted butter, cubed
  • 200 g dark mint chocolate (70% cocoa), pieces
  • 150 g caster sugar
  • 50 g soft brown sugar
  • 3 large eggs
  • ¼ tsp fine salt
  • 100 g plain flour, sieved
  • 25 g cocoa powder, sieved
  • ⅛ tsp instant coffee powder
  • 230 g Mint Aero chocolate bars (whole bars)

Instructions

  1. Preheat your oven to 170°C fan (190°C conventional). Line a 20×20 cm (8×8 inch) square tin with parchment, leaving overhang on the sides.
  2. Add the butter and dark mint chocolate to your Thermomix. Heat for 4 minutes at 60°C on speed 2. Scrape down, then mix for 10 seconds on speed 3 until smooth and glossy. Leave the mixture in the bowl.
  3. Add the caster sugar, brown sugar, eggs, and salt to the bowl. Mix for 20 seconds on speed 4. Do not use the butterfly attachment.
  4. Add the plain flour, cocoa powder, and instant coffee powder. Mix for 10 seconds on speed 3 using the reverse setting. Scrape down. Mix for 5 seconds on speed 2 using the reverse setting to finish. Do not overmix.
  5. Pour half the brownie batter into the lined tin and spread it evenly.
  6. Lay the whole Aero bars on top, covering the entire base.
  7. Pour the remaining brownie batter over the Aero bars. Spread gently to cover the mint layer.
  8. Bake at 170°C fan for 20–25 minutes. Look for a shiny, crackly top and a slight wobble in the middle. 23 minutes gives a fudgy center.
  9. Cool the brownies for 30 minutes in the tin. Lift out using the parchment overhang.
  10. Cool fully for at least 1 hour before cutting to keep the mint layer intact.
  11. Dip your knife in hot water, dry it, slice the brownies, and repeat the process for smooth edges.
