Make these easy, no-bake Mint Chocolate Chip Rice Krispie Treats for a fun, festive dessert that combines classic comfort with a cool minty chocolate flavor.

- 4 Tablespoons Butter
- 7 oz Marshmallow Fluff
- 1 cup marshmallows
- 2 Teaspoons Vanilla extract
- 8 cups Chocolate Krispies cereal
- 1 cup Chocolate Mint Chips
- 2 Tablespoon butter softened (for frosting)
- 1 ½ cups powdered sugar (for frosting)
- 3–4 Tablespoons milk (for frosting)
- ½ Teaspoon vanilla (for frosting)
- 2 oz. White chocolate (for frosting)
Instructions
- Coat the inside of a 13X9 inch pan with butter or cooking spray. Place parchment paper across the length of the pan, allowing for overhang to help remove the treats later. Butter or spray the parchment paper.
- Melt the butter in a large pan on the stove over medium heat. Once melted, add the marshmallow fluff and marshmallows. Stir constantly until the mixture is soft and smooth.
- Add the Chocolate Rice Krispies and the Chocolate Mint Chips at one time. Stir until the cereal is completely coated. The chips will melt into the mixture as you stir.
- Pour the mixture into the prepared pan. Press down to spread and fill the entire pan evenly.
- To make the frosting, mix the softened butter until smooth. Gradually add the powdered sugar alternately with 2 Tablespoons of milk until the mixture is smooth.
- Add the vanilla and melted white chocolate and mix well. If the frosting is too thick for drizzling, add a small amount of milk until you reach the desired consistency.
- Let the treats cool completely. Once cool, use the parchment overhang to lift the treats out of the pan and place them on a flat surface.
- Fill a frosting bag or Ziploc bag with the frosting. Cut a corner off the bag and drizzle the frosting over the Rice Krispie Treats. Decorate with crushed candy canes and green cake decorating sugar.
- Cut the treats into individual portions, yielding 24 to 36 pieces depending on your preferred size.
Notes
- You can make this recipe using only Marshmallow Fluff without the additional marshmallows, or you can use a regular size bag of marshmallows instead of the Fluff.
