A make-ahead breakfast casserole with golden bread, mixed berries, and a streusel topping.

- 1 16-ounce loaf French bread or sourdough, cut into 1-inch cubes
- 1/2 cup softened dairy-free or regular cream cheese
- 1/3 cup maple syrup or honey, divided
- 1 1/2 – 2 cups mixed berries, divided
- 6 large eggs
- 1 1/4 cups milk (almond milk used here)
- 1/2 teaspoon ground cinnamon
- 2 teaspoons pure vanilla extract
- 1/3 cup all-purpose flour (or gluten-free substitute)
- 1/3 cup packed brown sugar or coconut sugar
- 1/4 teaspoon ground cinnamon
- 4 tablespoons cold unsalted butter, cubed
Instructions
- Make the streusel topping: Combine flour, brown sugar, and cinnamon. Cut in butter with a pastry blender. Set aside in the fridge.
- Lightly grease a 9×9-inch baking dish.
- Mix softened cream cheese with 1 tablespoon maple syrup. Layer half the bread cubes in the dish. Add cream cheese dollops and half the berries.
- Add remaining bread cubes.
- Whisk eggs, milk, cinnamon, remaining maple syrup, and vanilla. Pour over bread. Press bread to absorb liquid.
- Top with remaining berries and streusel. Cover and chill for 1 hour or overnight.
- Preheat oven to 350°F. Bake covered for 30 minutes. Uncover and bake 23-26 minutes until golden.
- Cool for 5 minutes before serving.
Notes
- Use day-old bread for best texture.
- Fresh berries work best, but thaw and drain frozen ones if using.
- For a vegan version, use egg substitutes like Just Egg or flax eggs.
