  • 2 tablespoons (25g) unsalted butter, melted
  • 8 oz (225g) cream cheese, room temperature
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon pure vanilla extract
  • 12 teaspoons lemon zest, optional
  • 1 cup (240 ml) heavy cream
  • Diced fresh fruit, for topping

Instructions

  1. Make the crust: Mix crumbs and melted butter in a bowl until the crumbs are moistened. Divide the mixture evenly into individual serving dishes (about 2 tablespoons per dish). Press the mixture down to form a crust layer.
  2. Make the filling: Combine cream cheese and sugar in a large bowl. Whisk until the mixture is completely smooth.
  3. Add vanilla extract and lemon zest, if using. Set aside.
  4. In a separate bowl, whisk the heavy cream until soft peaks form. Do not overbeat.
  5. Gently fold half of the whipped cream into the cream cheese mixture using a rubber spatula. Fold in the remaining whipped cream until just combined.
  6. Spoon or pipe about 1/2 cup of filling into each serving dish over the crust.
  7. Top with fresh fruit. Cover the dishes and refrigerate for at least one hour before serving, or store for up to 2-3 days.
