Description
Simple, no-bake bars made with peanut butter, oats, and a chocolate topping. These are easy to prepare and store well for quick snacks.
Ingredients

- 3 cups peanut butter, smooth
- 1 cup honey
- 1/2 tsp salt
- 1 tsp vanilla extract
- 4 cups quick oats
- 2 cups semi sweet chocolate chips
- 2 1/2 tbsp unsalted butter
Instructions
- Spray or line a 9×13 pan with parchment paper, leaving overhang for easy removal.
- Combine peanut butter, honey, and salt in a large saucepan. Heat gently over medium-low heat until melted. Continue heating for 2 more minutes, stirring occasionally.
- Remove the pan from the heat. Stir in the vanilla extract, then stir in the oats.
- Pour the oat mixture into the lined pan. Spread it evenly without pressing down hard.
- Place the chocolate chips and butter in a microwave-safe bowl. Heat in 30-second increments until melted, stirring between intervals. Alternatively, use a double boiler.
- Pour the melted chocolate over the oat layer. Use a spatula to spread the chocolate to cover the bars completely.
- Place the pan in the refrigerator to set for at least 2 hours.
- Cut the bars into desired sizes and serve. Store leftovers at room temperature for one week or refrigerated for up to 10 days.
Notes
- Leaving overhang with the parchment paper helps you lift the bars out of the pan for cutting.
- Do not press the oat mixture down firmly in the pan; this can result in hard bars.
- These bars are slightly gooier when kept at room temperature.
