Description

Make moist banana bread using only the natural sweetness of ripe bananas. This recipe requires no added sugar and is simple to prepare.


Ingredients

  • 500 grams peeled, overripe bananas (about 2 1/2 cups mashed from about 56 medium)
  • 1/4 cup melted coconut oil or neutral-flavored oil of choice
  • 2 eggs
  • 1 teaspoon vanilla or banana extract
  • 1 3/4 cups white whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 1/2 cup mix-ins such as chopped walnuts or pecans, raisins, chocolate chips (optional)

Instructions

  1. Preheat your oven to 325F. Lightly grease a 9×5-inch loaf pan or three mini loaf pans.
  2. Combine the mashed bananas, oil, eggs, and vanilla extract in a large bowl. Whisk until well combined. Alternatively, weigh the bananas, then blend them with the wet ingredients until smooth.
  3. Add the flour, baking soda, baking powder, salt, cinnamon, and any mix-ins to the wet ingredients. Stir just until combined. Pour the batter into your prepared loaf pan(s).
  4. Bake for 60 to 75 minutes for a large loaf (35-40 minutes for mini loaves) or until a toothpick inserted into the center comes out clean. Cool the bread in the pan for 10 minutes, then transfer it to a wire rack to cool for another 15-20 minutes before slicing.

Notes

  • If you use a food scale, you can weigh the bananas instead of mashing them; blend them with the wet ingredients for a smoother texture.
  • White whole wheat flour provides a good structure while keeping the bread wholesome.
