Description
Make moist banana bread using only the natural sweetness of ripe bananas. This recipe requires no added sugar and is simple to prepare.

- 500 grams peeled, overripe bananas (about 2 1/2 cups mashed from about 5–6 medium)
- 1/4 cup melted coconut oil or neutral-flavored oil of choice
- 2 eggs
- 1 teaspoon vanilla or banana extract
- 1 3/4 cups white whole wheat flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 teaspoon cinnamon
- 1/2 cup mix-ins such as chopped walnuts or pecans, raisins, chocolate chips (optional)
Instructions
- Preheat your oven to 325F. Lightly grease a 9×5-inch loaf pan or three mini loaf pans.
- Combine the mashed bananas, oil, eggs, and vanilla extract in a large bowl. Whisk until well combined. Alternatively, weigh the bananas, then blend them with the wet ingredients until smooth.
- Add the flour, baking soda, baking powder, salt, cinnamon, and any mix-ins to the wet ingredients. Stir just until combined. Pour the batter into your prepared loaf pan(s).
- Bake for 60 to 75 minutes for a large loaf (35-40 minutes for mini loaves) or until a toothpick inserted into the center comes out clean. Cool the bread in the pan for 10 minutes, then transfer it to a wire rack to cool for another 15-20 minutes before slicing.
Notes
- If you use a food scale, you can weigh the bananas instead of mashing them; blend them with the wet ingredients for a smoother texture.
- White whole wheat flour provides a good structure while keeping the bread wholesome.
- You can substitute the optional mix-ins with your preference, such as dried fruit or nuts.
