Make these simple, no-bake chocolate oat bars for a quick, comforting homemade snack or dessert.

- 2 cups quick oats, gluten-free if needed
- 1/2 cup creamy peanut butter
- 1/3 cup honey
- 1 tsp vanilla extract
- 1/2 cup semi-sweet chocolate chips
- 1/3 cup creamy peanut butter, extra for drizzling
- 2–3 tbsp mini chocolate chips, for topping
Instructions
- Line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, mix oats, 1/2 cup peanut butter, honey, and vanilla extract. Stir until fully combined.
- Press 1 1/2 cups of the oat mixture firmly into an even layer in the bottom of the prepared dish. Compact the layer well.
- Make the chocolate layer: Add 1/3 cup peanut butter and chocolate chips to a microwave-safe bowl. Microwave in 20-30 second intervals, stirring between each interval until the chocolate chips melt. Stir the mixture until the chocolate and peanut butter are fully mixed.
- Pour the chocolate mixture evenly over the oat mixture.
- Crumble the remaining oat mixture evenly over the top. Drizzle with extra melted peanut butter and sprinkle with mini chocolate chips.
- Refrigerate for at least 2-3 hours before cutting into 12 even bars. Refrigerate or freeze the remaining bars.
Notes
- Line your pan with parchment paper; otherwise, the bars will be hard to remove and may crumble.
- Allow the bars the full 2 hours of refrigeration time for the best texture.
