No-Bake Chocolate Oat Bars

Description

Make these simple, no-bake chocolate oat bars for a quick, comforting homemade snack or dessert.


Ingredients

  • 2 cups quick oats, gluten-free if needed
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • 1/3 cup creamy peanut butter, extra for drizzling
  • 23 tbsp mini chocolate chips, for topping

Instructions

  1. Line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, mix oats, 1/2 cup peanut butter, honey, and vanilla extract. Stir until fully combined.
  3. Press 1 1/2 cups of the oat mixture firmly into an even layer in the bottom of the prepared dish. Compact the layer well.
  4. Make the chocolate layer: Add 1/3 cup peanut butter and chocolate chips to a microwave-safe bowl. Microwave in 20-30 second intervals, stirring between each interval until the chocolate chips melt. Stir the mixture until the chocolate and peanut butter are fully mixed.
  5. Pour the chocolate mixture evenly over the oat mixture.
  6. Crumble the remaining oat mixture evenly over the top. Drizzle with extra melted peanut butter and sprinkle with mini chocolate chips.
  7. Refrigerate for at least 2-3 hours before cutting into 12 even bars. Refrigerate or freeze the remaining bars.

Notes

  • Line your pan with parchment paper; otherwise, the bars will be hard to remove and may crumble.
  • Allow the bars the full 2 hours of refrigeration time for the best texture.
