  • 1 cup buttermilk, at room temperature

  • 2 tablespoons heavy cream
  • 1/4 teaspoon lemon zest (for icing)
  • 1 pinch salt (for icing)

Instructions

  1. Preheat your oven to 325 degrees F (165 degrees C). Spray an 8 1/2×4 1/2-inch loaf pan with non-stick spray.
  2. Whisk sugar, eggs, olive oil, 2 tablespoons lemon zest, 1/4 cup lemon juice, and vanilla extract in a large bowl until combined.
  3. Add 1 cup flour, baking powder, and 1/2 teaspoon salt to the bowl and mix until just combined.
  4. Pour in buttermilk and mix until just combined.
  5. Add the remaining 1 cup flour and mix until just combined. Do not overmix.
  6. Pour the batter into the prepared pan and tap the pan on the counter a few times to release large air bubbles.
  7. Bake until the top springs back lightly when touched, 60 to 65 minutes. A toothpick inserted near the center should come out clean.
  8. Allow the bread to cool in the pan for 30 minutes before moving it to a wire rack to cool completely.
  9. To make the icing, whisk powdered sugar, 2 tablespoons lemon juice, cream, 1/4 teaspoon zest, and 1 pinch salt together in a small bowl until smooth.
  10. Pour the icing over the cooled bread and let it set before you slice it.
