One Pot Cajun Chicken Alfredo Pasta

A creamy, spicy pasta dish made in one pot for easy cleanup.


Ingredients

  • 1 pound boneless skinless chicken breast, cut into bite-size pieces
  • 2 tablespoons olive oil
  • 2 teaspoons Cajun seasoning
  • 2 teaspoons minced garlic
  • 1 ½ cups chicken broth
  • 1 cup half and half
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • ¼ teaspoon garlic powder
  • 8 ounces uncooked fettuccini pasta
  • ½ cup grated parmesan cheese

Instructions

  1. Heat a large pot over medium-high heat and add olive oil. Add chicken and half the Cajun seasoning. Cook for 5-7 minutes until chicken reaches 165°F. Add garlic and cook for 1 minute.
  2. Add chicken broth, half and half, remaining Cajun seasoning, salt, black pepper, and garlic powder. Stir to combine. Add fettuccini pasta.
  3. Cover the pot and bring to a boil. Remove lid, reduce heat to medium-low, and cook for 10-12 minutes until noodles are al dente. Stir frequently.
  4. Remove from heat and add parmesan cheese. Stir until melted. Serve immediately.
