- 2 Tbsp olive oil, divided
- 14 oz andouille sausage, sliced into 1/4-inch rounds
- 1 large onion, chopped
- 5 garlic cloves, minced
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 2 tsp Cajun seasoning
- 1 tsp smoked paprika
- 1 1/2 cup uncooked long grain white rice
- 3 cups low-sodium chicken stock
- 2 cups frozen peas
Instructions
- Heat 1 tablespoon olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the sliced sausage and stir.
- Increase heat to high and brown the sausage for 3-4 minutes, stirring often. Remove the sausage to a paper towel-lined plate and return the skillet to the heat.
- Add the remaining 1 tablespoon olive oil. Add the onion and cook for 3-4 minutes, stirring often. Add the garlic and stir; cook for 30-60 seconds until fragrant.
- Add the diced bell peppers and stir; cook for 3-4 minutes, stirring often.
- Add the Cajun seasoning, smoked paprika, rice, and stock, as well as the browned sausage; stir and bring to a simmer.
- Reduce heat to low, stir, and cover with a lid. Allow to simmer for 20 minutes.
- Remove lid and pour the peas over the surface of the rice; do not stir. Replace lid and remove from heat. Allow to sit for 10 minutes. Stir before serving.
