Description
A festive, alcohol-free sparkling drink combining tart pomegranate with warm ginger, perfect for celebrations or romantic dinners.

- 3/4 cup pomegranate juice (unsweetened)
- 6–7 fresh mint leaves, plus more for garnish
- 3/4 cup club soda or sparkling water
- 1 1/4 cups ginger ale, or non-alcoholic ginger beer
- pomegranate arils for garnish
Instructions
- Muddle mint leaves a few times with the pomegranate juice in a mixing glass to release the mint flavor.
- Add ice to the mixing glass and stir the mixture.
- Add the club soda or sparkling water to the mixing glass.
- Divide the pomegranate mixture among 3-4 glasses and fill each glass with ice cubes.
- Top each glass with ginger beer until full and stir one more time.
- Garnish with fresh mint and pomegranate arils.
Notes
- For a sweeter drink, use ginger ale. For a stronger ginger flavor, use a non-alcoholic ginger beer like Regatta or Fever Tree. You can use homemade ginger ale for lower sugar content.
- Freeze pomegranate juice and mint or rosemary into ice cube molds ahead of time. Pour ginger ale on top when serving. Rosemary looks good when frozen.
