Description

Ingredients

  • 1 egg
  • 1/4 cup maple syrup
  • 1 cup pumpkin puree
  • 1 cup milk
  • 2 cups protein pancake mix
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/2 cup chocolate chips optional
  • For Frosting: 1/2 cup cream cheese softened
  • For Frosting: 2-3 tablespoon plain Greek yogurt
  • For Frosting: 2 tablespoon honey
  • For Frosting: 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350F and prepare a 12-cavity muffin pan.
  2. In a large bowl, whisk together the egg, maple syrup, pumpkin puree, and milk.
  3. Once combined, add the protein pancake mix, pumpkin pie spice, and cinnamon. Stir well.
  4. Fold in chocolate chips if you are using them, and divide the batter evenly between the 12 muffin cavities (about 1/4 cup in each).
  5. Bake for 22-25 minutes or until a toothpick inserted into the center of the muffin comes out clean.
  6. While the muffins bake, make your cream cheese frosting (if using) by beating together the softened cream cheese, yogurt, honey, and vanilla extract until smooth.
  7. Allow the muffins to cool before topping with the frosting.

Notes

  • If you do not have protein pancake mix, you can substitute with 1 cup all-purpose flour, 1 cup vanilla protein powder, 2 teaspoons baking powder, and 1/2 teaspoon salt.
