Make fast, satisfying cheesy chicken quesadillas with a fresh mango salsa side.

- 1 yellow pepper, diced
- 1 small mango, peeled and diced
- 8 cherry tomatoes, quartered
- 3 spring onions, chopped
- 1 tsp chopped jalapeño peppers (optional)
- Juice of 1 lime
- Salt and freshly ground black pepper, to taste
- 4 flour tortillas
- 150g Monterey Jack or cheddar cheese, grated
- Shredded leftover chicken or cold turkey
- 1 green or red pepper, finely diced
- Small handful coriander leaves, chopped, plus extra for garnish (optional)
- Soured cream, to serve (optional)
- Guacamole, to serve (optional)
Instructions
- For the salsa, mix all salsa ingredients in a bowl and season with salt and pepper.
- For the quesadillas, lay two tortillas on a flat surface. Top each with cheese, then chicken, peppers, and coriander. Place the remaining tortillas on top and press gently.
- Heat a frying pan over medium heat. Add one quesadilla to the pan without oil. Fry for 2-3 minutes on each side until the tortilla is crisp, the cheese is melted, and the chicken is heated through.
- Keep the first quesadilla warm while you cook the second one.
- Cut the quesadillas into quarters, arrange on plates. Top with soured cream, garnish with coriander, and serve with the salsa and guacamole on the side.
Notes
- You can customize the filling with other cooked meats or vegetables you have on hand.
- Pressing down on the quesadilla helps the layers stick together while cooking.
