Instructions
- Preheat oven to 350°F.
- Line a baking pan with parchment paper.
- Cream together sugar and butter in a large bowl.
- Mix in egg, buttermilk, and vanilla extract.
- Stir in red food coloring.
- In a separate bowl, whisk together flour, baking soda, salt, and cocoa powder.
- Stir dry ingredients into the wet ingredients until combined.
- Scoop dough with a mini ice cream scoop and place 2 inches apart on the baking sheet.
- Bake for 7-8 minutes.
- Let cookies sit in the pan for 1-2 minutes, then transfer to a cooling rack.
- For the filling, cream together cream cheese, powdered sugar, butter, and vanilla extract.
- Pipe filling onto a cooled cookie and top with another.
- Refrigerate for at least 3 hours to set the filling.
- Store in the fridge.
