Description
A healthy, flavorful chicken dinner featuring Southwest spices, black beans, corn, and melted cheese, cooked quickly in one skillet.

- 2 large chicken
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
- 1/2 medium onion chopped
- 1 (10 ounce) can Ro-tel diced tomatoes & green chilies drained
- 1 (14 ounce) can black beans drained & rinsed
- 1 (12 ounce) can corn drained
- 1/2 teaspoon smoked paprika
- 1 cup Mexican cheese blend
- Fresh cilantro chopped optional, to taste
Instructions
- Preheat your oven to 400F and move the rack to the middle position.
- Cut the chicken in half lengthwise to create 4 thinner cutlets. Season both sides with the garlic powder, chili powder, salt, and pepper.
- Add the oil to an oven-safe skillet over medium-high heat. Cook the chicken for about 3-4 minutes per side until lightly golden. Remove the chicken from the pan.
- Add the onion to the skillet and sauté for 5 minutes or until softened and lightly browned.
- Stir in the Rotel tomatoes, beans, corn, and smoked paprika. Heat for a couple of minutes, scraping up the browned bits from the bottom of the pan.
- Return the chicken to the skillet and spoon some of the tomato/bean/corn mixture over the chicken. Sprinkle the cheese over everything, concentrating it on the chicken.
- Place the skillet in the oven for 5-7 minutes or until the chicken reaches 165F and the cheese melts. You can broil the cheese for a few minutes at the end if you want it browned, but watch carefully to prevent burning.
- Top with fresh chopped cilantro if you are using it, and serve immediately.
Notes
- This recipe uses chicken , but you can substitute them with boneless, skinless chicken thighs if you prefer.
- For extra heat, add a pinch of cayenne pepper with the other spices.
- If you do not have an oven-safe skillet, transfer the mixture to a baking dish after step 5.
