Simple Santa Fe Chicken Skillet

Description

A healthy, flavorful chicken dinner featuring Southwest spices, black beans, corn, and melted cheese, cooked quickly in one skillet.


Ingredients

  • 2 large chicken
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • 1/2 medium onion chopped
  • 1 (10 ounce) can Ro-tel diced tomatoes & green chilies drained
  • 1 (14 ounce) can black beans drained & rinsed
  • 1 (12 ounce) can corn drained
  • 1/2 teaspoon smoked paprika
  • 1 cup Mexican cheese blend
  • Fresh cilantro chopped optional, to taste

Instructions

  1. Preheat your oven to 400F and move the rack to the middle position.
  2. Cut the chicken in half lengthwise to create 4 thinner cutlets. Season both sides with the garlic powder, chili powder, salt, and pepper.
  3. Add the oil to an oven-safe skillet over medium-high heat. Cook the chicken for about 3-4 minutes per side until lightly golden. Remove the chicken from the pan.
  4. Add the onion to the skillet and sauté for 5 minutes or until softened and lightly browned.
  5. Stir in the Rotel tomatoes, beans, corn, and smoked paprika. Heat for a couple of minutes, scraping up the browned bits from the bottom of the pan.
  6. Return the chicken to the skillet and spoon some of the tomato/bean/corn mixture over the chicken. Sprinkle the cheese over everything, concentrating it on the chicken.
  7. Place the skillet in the oven for 5-7 minutes or until the chicken reaches 165F and the cheese melts. You can broil the cheese for a few minutes at the end if you want it browned, but watch carefully to prevent burning.
  8. Top with fresh chopped cilantro if you are using it, and serve immediately.

Notes

  • This recipe uses chicken , but you can substitute them with boneless, skinless chicken thighs if you prefer.
  • For extra heat, add a pinch of cayenne pepper with the other spices.
  • If you do not have an oven-safe skillet, transfer the mixture to a baking dish after step 5.
