  • 1/2 cup cottage cheese whole milk, 2%, or fat free
  • 1/2 avocado peeled and thinly sliced
  • 1/4 cup sliced cherry tomatoes
  • 12 Tablespoons hot honey or chili crunch
  • 1 hard boiled egg sliced or grated
  • 1 Tablespoon everything bagel seasoning
  • 12 ounces smoked salmon
  • Red onion thinly sliced, or pickled red onion to taste
  • 1 Tablespoon capers
  • Fresh dill to taste
  • 12 Tablespoons creamy peanut butter
  • 1/2 banana sliced
  • Honey and cinnamon to taste
  • 1 Tablespoon strawberry jam
  • 23 fresh strawberries sliced
  • 2 teaspoons chia seeds
  • 12 Tablespoons creamy almond butter
  • 1/4 cup fresh berries like raspberries or blueberries
  • Honey to taste

Instructions

  1. Preheat the oven to broil.
  2. Use a pastry brush to brush the melted butter on top of the bread.
  3. Place the bread on a baking sheet and toast under the broiler for 4-6 minutes, until golden brown. Alternately, toast in a skillet or pop in the toaster.
  4. Allow the toast to cool slightly then top with cottage cheese.
  5. Add your choice of toppings and serve.
