Description

A nourishing and modern savory oatmeal breakfast featuring mushrooms, avocado, and fresh toppings.


Ingredients

  • 1 onion, chopped
  • 8 oz crimini mushrooms, chopped
  • 1 clove garlic, crushed
  • 1 tablespoon olive oil
  • 1 and 1/2 cups steel cut oats
  • 6 cups water
  • salt and pepper, to taste
  • Fried eggs, for serving
  • Sliced avocado, for serving
  • Baby arugula, for serving
  • Optional: shaved parmesan cheese
  • Optional: parsley
  • Optional: sautéed mushrooms

Instructions

  1. Heat the onion, mushrooms, and garlic in a large pot with the olive oil over medium-high heat. Cook for 6-7 minutes, until the onions are slightly browned and the mushrooms are cooked down.
  2. Add the steel cut oats and water. Bring to a boil, then reduce heat to low and simmer 25-30 minutes, until the oatmeal is tender and the mixture has thickened.
  3. Season the oatmeal to taste with salt and pepper.
  4. Top the oatmeal with fried eggs, avocado, arugula, parmesan, parsley, and sautéed mushrooms, if using.

Notes

  • You can use rolled or quick oats instead of steel cut oats, but follow the cooking instructions on the package as they cook faster.
