Description
This recipe provides an easy, all-in-one dinner solution using sausage and vegetables cooked together on a single sheet pan for simple preparation and minimal cleanup.

- 2 cups diced baby red potato
- 3 cups green beans trimmed and halved
- 2 cups broccoli florets
- 1–1/2 cups chopped bell peppers
- 13 ounces smoked sausage
- 6 tablespoons olive oil
- 1/4 teaspoon red pepper flakes
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 tablespoon dried oregano
- 1 tablespoon dried parsley
- Salt and pepper to taste
- Cooked quinoa or rice, for serving (optional)
Instructions
- Preheat your oven to 400°F. Line a very large sheet pan or two smaller pans with parchment paper.
- Prepare the vegetables: wash and chop unpeeled baby red potatoes into small pieces (about 10–12 pieces per potato). Trim green beans and cut them in half. Chop broccoli into florets. Chop peppers into 1-inch pieces. Coin the sausage into thick (1/2-inch) slices.
- Place all vegetables and sausage on the prepared sheet pan.
- Pour the olive oil and all the seasonings (red pepper flakes, paprika, garlic powder, oregano, parsley) over the ingredients. Season with salt and pepper.
- Use your hands to toss everything until the vegetables and sausage are evenly coated with the oil and seasonings. Spread the mixture out so it is not overlapping.
- Bake for 15 minutes. Remove the pan from the oven and flip or stir all the ingredients around.
- Return the pan to the oven and bake for another 10–15 minutes, or until the vegetables are crisp-tender.
- If you wish, sprinkle freshly grated Parmesan cheese over the hot mixture as soon as it comes out of the oven. Add fresh parsley if desired. Serve immediately over cooked rice or quinoa if you choose.

- For the smoked sausage, use your preferred type.
