A fast and satisfying meal using leftover rice and pantry staples, perfect for a quick dinner or lunch.
Ingredients

- 2 cups cooked jasmine rice cold & day-old
- 1 green onion finely chopped
- 2.5 tablespoon regular soy sauce or light soy sauce
- 0.5 tablespoon sesame oil
- 4 large eggs beaten
- 2 tbsp vegetable oil or any neutral oil
Instructions
- Heat vegetable oil in a large pan or wok. If you use a wok, let the oil smoke. If you use a normal pan, skip smoking the oil.
- Pour in beaten eggs. Quickly stir-fry the eggs until they form shapes.
- When the eggs take shape but are still moist, quickly toss in the rice. Break apart any clumps of rice in the pan.
- Move everything to one side of the pan. Add the remaining oil and the green onions to the empty space. Mix the green onions into the rice and eggs.
- Add soy sauce and sesame oil along the edges of the pan. Toss everything until the grains are brown. Remove from heat. Serve hot.
Notes
- Use cold, day-old rice for the best texture in fried rice.
- Avoid using dark soy sauce as it will make the rice too dark.
