Skillet Steak Bites in Mushroom Gravy

Description

Make tender steak bites smothered in a rich, savory mushroom gravy, all cooked quickly in a single skillet for a comforting family dinner.


Ingredients

  • 2 tablespoons olive or avocado oil
  • 2 pounds sirloin steak, cut into 1-inch pieces
  • 1 teaspoon salt
  • 3/4 teaspoon pepper
  • 2 tablespoons oil or avocado oil, or butter or ghee
  • 8 ounces sliced mushrooms
  • 1 tablespoon garlic, minced
  • 1 cup beef stock
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 tablespoon arrowroot flour or cornstarch
  • 1 tablespoon cold water

Instructions

  1. Heat 2 tablespoons of oil in a large skillet over medium-high heat.
  2. Add steak bites and season with salt and pepper. Sear steak for 2 to 3 minutes per side until browned. Remove steak from the pan and set aside.
  3. Reduce heat to medium. Add remaining oil and sliced mushrooms. Sauté until mushrooms are tender, about 4 to 5 minutes.
  4. Add the minced garlic. Sauté for about one minute until golden.
  5. Add beef stock, balsamic vinegar, thyme, rosemary, onion powder, and garlic powder. Stir to combine.
  6. Return steak bites to the skillet. Cover and simmer for about 4 to 5 minutes, or until the gravy is heated through and the steak is cooked to your preference.
  7. In a small container, combine arrowroot flour or cornstarch and cold water. Shake well.
  8. If using cornstarch, add the slurry to the skillet now. Simmer for 1 to 2 minutes until the sauce thickens.
  9. If using arrowroot flour, let the steak cook another 1 to 2 minutes after returning it to the pan. Turn the stovetop burner off, pour in the slurry, and stir immediately until the sauce thickens.
  10. Taste and add more salt and pepper if needed. Ladle over mashed potatoes or rice.

Notes

  • For less cooked steak, add the steak bites back to the pan only when the gravy is almost done, allowing them just a minute to warm up.
  • You can cook the steak in two batches if your skillet is not large enough to hold all the pieces at once.
