Slow Cooker Lemon Herb Chicken & Rice

Description

A simple, flavorful dish made in the slow cooker with tender chicken, lemon, and herbs.


Ingredients

  • 4 boneless skinless chicken breasts
  • 3 tbsp unsalted butter
  • 1 shallot, diced
  • 4 cloves garlic, minced
  • 1 tbsp fresh chopped rosemary
  • zest from 1 lemon
  • 1 ½ cups chicken broth
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ cup heavy cream
  • 1 tbsp cornstarch

Instructions

  1. If your slow cooker has a sauté function, turn it on. If not, heat a large skillet over medium-high heat.
  2. Add the butter to the slow cooker or skillet and brown the chicken breasts for 3-5 minutes per side. They should be browned but not fully cooked.
  3. Add the shallot, rosemary, and garlic to the slow cooker or skillet and cook for 1-2 minutes.
  4. If using a skillet, transfer the chicken and herb mixture to the slow cooker.
  5. Pour in the chicken broth and stir in the lemon zest. Season with salt and pepper.
  6. Cook on high for 3-4 hours or low for 6 hours, until the chicken is tender.
  7. Remove the chicken from the slow cooker and set aside, covered to keep warm.
  8. If your slow cooker has a sauté function, turn it on. If not, transfer the juices to a skillet over medium heat.
  9. Whisk together cornstarch and 2 tbsp water in a small bowl.
  10. Add the cream to the slow cooker or skillet, then stir in the cornstarch slurry.
  11. Cook for 5 minutes until the sauce thickens.
  12. Drizzle the sauce over the chicken. Garnish with extra rosemary if desired.

Notes

  • Use salted butter if preferred, but adjust added salt.
  • For a lighter version, substitute half-and-half for heavy cream.
