- 4 pounds skin-on, bone-in chicken thighs
- 3 medium russet potatoes, peeled and quartered
- ½ cup freshly squeezed lemon juice
- ½ cup Greek olive oil
- 6 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 tablespoon kosher salt
- 1 teaspoon dried rosemary
- 1 teaspoon freshly ground black pepper
- 1 pinch cayenne pepper
- 1 cup chicken broth, divided
- 1 teaspoon chopped fresh oregano
Instructions
- Preheat oven to 425°F (220°C). Lightly oil a roasting pan.
- Toss chicken and potatoes with lemon juice, olive oil, garlic, dried oregano, salt, rosemary, black pepper, and cayenne.
- Place chicken skin-side up in pan with potatoes. Drizzle with 2/3 cup chicken broth.
- Bake for 20 minutes. Flip chicken skin-side up again.
- Bake another 25 minutes until chicken reaches 165°F (74°C). Remove chicken.
- Broil potatoes for 3 minutes until crisp.
- Deglaze pan with remaining broth and pour over chicken and potatoes.
- Sprinkle with fresh oregano.
Notes
- Use fresh lime juice for best flavor.
- Adjust cayenne for more or less heat.
