Spicy Honey-Lime Chicken Thighs

Description

Juicy chicken thighs with a tangy, spicy glaze, roasted with potatoes for a balanced meal.


Ingredients

  • 4 pounds skin-on, bone-in chicken thighs
  • 3 medium russet potatoes, peeled and quartered
  • ½ cup freshly squeezed lemon juice
  • ½ cup Greek olive oil
  • 6 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon kosher salt
  • 1 teaspoon dried rosemary
  • 1 teaspoon freshly ground black pepper
  • 1 pinch cayenne pepper
  • 1 cup chicken broth, divided
  • 1 teaspoon chopped fresh oregano

Instructions

  1. Preheat oven to 425°F (220°C). Lightly oil a roasting pan.
  2. Toss chicken and potatoes with lemon juice, olive oil, garlic, dried oregano, salt, rosemary, black pepper, and cayenne.
  3. Place chicken skin-side up in pan with potatoes. Drizzle with 2/3 cup chicken broth.
  4. Bake for 20 minutes. Flip chicken skin-side up again.
  5. Bake another 25 minutes until chicken reaches 165°F (74°C). Remove chicken.
  6. Broil potatoes for 3 minutes until crisp.
  7. Deglaze pan with remaining broth and pour over chicken and potatoes.
  8. Sprinkle with fresh oregano.

Notes

  • Use fresh lime juice for best flavor.
  • Adjust cayenne for more or less heat.
