Spicy Southern Chicken Spaghetti Casserole

Description

A creamy, cheesy casserole with a spicy kick, perfect for family dinners.


Ingredients

  • 1 lb spaghetti, cooked
  • 1 lb chicken, shredded (about 1 rotisserie chicken)
  • 2 tbsp unsalted butter
  • 1 lb Velveeta cheese, cut into chunks
  • 1 cup milk
  • 1 (10 oz) can original Rotel
  • 1 (10 oz) can cream of mushroom soup
  • salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • ½ cup panko bread crumbs
  • crushed red pepper flakes for serving

Instructions

  1. Grease a 9×13 casserole dish and set aside. Preheat oven to 350°F.
  2. Combine butter, Velveeta, Rotel, cream of mushroom soup, and milk in a large pot. Cook over medium heat, stirring, until cheese melts and mixture is smooth.
  3. Add chicken, spaghetti, salt, and pepper. Toss to combine.
  4. Pour mixture into the casserole dish. Level the top with a spoon.
  5. Sprinkle shredded cheese and breadcrumbs on top.
  6. Cover with foil and bake for 30 minutes, or until cheese is bubbly.
  7. Remove foil and broil for 3-5 minutes until breadcrumbs brown lightly.
  8. Let sit for 5 minutes before serving. Top with red pepper flakes.
