Strawberry Acai Refresher Copycat

Description

Make a simple, refreshing homemade version of the popular Strawberry Acai Refresher using a homemade base.


Ingredients

  • ½ cup Strawberry Acai Base (recipe below)
  • ½ cup water
  • Ice
  • Freeze-dried strawberries
  • Strawberry Acai Base Ingredients:
  • 2 ¼ cups white grape juice
  • 1 cup hulled and sliced strawberries
  • ½ teaspoon acai powder
  • ½ teaspoon green coffee extract powder
  • ¼ teaspoon passionfruit powder
  • 1 teaspoon lemon juice

Instructions

  1. Make the Strawberry Acai Base: Combine white grape juice and sliced strawberries in a medium saucepan and bring to a boil.
  2. Lower heat to a simmer and let the mixture simmer for 10 minutes, until strawberries break down.
  3. Remove from heat and strain the mixture through a fine mesh sieve into a heatproof bowl. Press down on the strawberries with a wooden spoon to extract liquid. Discard strawberries.
  4. Pour the strained liquid back into the saucepan and return to low heat. Stir in acai powder, green coffee extract powder, and passionfruit powder until the powders dissolve as much as possible.
  5. Remove from heat and stir in lemon juice. Pour into a heatproof bowl or large mason jar and refrigerate until completely cool.
  6. To assemble the Refresher: Add about ½ cup of the cooled Strawberry Acai Base and ½ cup water to an ice-filled shaker. Shake well to combine.
  7. Pour the mixture into an ice-filled glass containing freeze-dried strawberries.
  8. Adjust sweetness by adding more base for a sweeter drink or less for a less sweet drink.

Notes

  • This Strawberry Acai Base recipe makes enough for about 4 full drinks when using ½ cup of base per drink.
  • Store the base in your refrigerator for about 2 weeks.
  • You can omit the green coffee extract if you do not want caffeine, as it does not change the flavor. You can add more extract for more caffeine.
