Thermomix Apple Cinnamon Muffins

Description

Make soft, café-style apple cinnamon muffins using your Thermomix. This recipe yields moist, fruit-filled treats with a warm spice aroma and a simple cinnamon-sugar topping.


Ingredients

  • 2 apples (around 200g) peeled, cored and quartered
  • 115 g butter
  • 120 g milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 120 g brown sugar
  • 300 g plain flour
  • 2 teaspoon baking powder
  • 2 teaspoon ground cinnamon
  • ½ teaspoon salt
  • For the topping: 50 g butter
  • For the topping: 50 g sugar granulated or caster
  • For the topping: 2 teaspoon ground cinnamon

Instructions

  1. Pre-heat your oven to 180C / 350F. Line a muffin tray with cupcake liners.
  2. Add the apple to the Thermomix bowl. Chop for 3 seconds / speed 5. Set the chopped apple aside.
  3. Add 115g butter to the bowl. Melt for 2 minutes / 60 degrees / speed 2.
  4. Add the milk, eggs, vanilla extract, brown sugar, reserved apple, flour, baking powder, 2 teaspoons of cinnamon, and salt to the bowl. Mix for 30 seconds / speed 4.
  5. Use a cookie or ice-cream scoop to divide the mixture equally between the prepared muffin cases.
  6. Bake in the oven for 20 minutes, or until a skewer inserted into the middle of a muffin comes out clean.
  7. Allow the muffins to cool for a couple of minutes before transferring them to a cooling rack.
  8. For the topping: Add 50g butter to the Thermomix and melt for 2 minutes / 60 degrees / speed 2.
  9. Mix the 50g sugar and 2 teaspoons of cinnamon in a separate bowl.
  10. While the muffins are still warm, use a pastry brush to brush the tops with a little melted butter, then sprinkle the cinnamon/sugar mixture over the tops.
