Make light, crumbly, bakery-style cheesy scones quickly using your Thermomix. These savory bakes feature sharp cheddar and parmesan, perfect for soup or brunch.

- 1 Handful fresh sage leaves, foliage only
- 60 Grams parmesan cheese, cubed
- 80 Grams mature cheddar cheese, cubed
- 160 Grams cream
- 90 Grams soda water
- 350 Grams SR flour
- 30 Grams sunflower seeds
- 1 Pinch pink salt flakes
Instructions
- Preheat your oven to 170°C and line a baking tray with paper.
- Place sage leaves and cheeses into the Thermomix bowl and mill together for 7 seconds at speed 7. Remove this mixture and set it aside.
- Place the remaining ingredients into the Thermomix bowl and mix together for 10 seconds at speed 4 until dough forms.
- Add 70g of the grated cheese mixture into the bowl and mix for 5 seconds at speed 4.
- Tip the mixture out onto a Silpat mat and push it together with your hands to form a disc. Roll out the dough gently and cut rounds using your measuring cup as a cutter.
- Place the scones onto the tray, top with the remaining cheese mixture, and bake for approximately 15 minutes or until golden and fragrant.
Notes
- This recipe yields scones with pockets of melted cheese and a soft interior.
