Thermomix Lemon Loaf with Glaze

Description

Make a moist, bright lemon loaf easily using your Thermomix. This recipe uses simple ingredients for a tender crumb and a glossy citrus glaze, perfect for a simple treat.


Ingredients

Scale
  • 4 eggs
  • 200 Grams raw caster sugar
  • 3 lemons, zest and 40ml juice
  • 80 Grams Extra Virgin Olive Oil (EVOO)
  • 150 Grams pot set yoghurt or purchased Greek yoghurt
  • 10 Drops doTERRA lemon oil (optional)
  • 250 Grams Cake flour or SR flour
  • 30 Grams butter (for glaze)
  • 80 Grams Ten Times sugar (icing sugar for glaze)
  • Fresh lemon juice as needed (for glaze)
  • Edible flowers to garnish

Instructions

  1. Preheat oven to 170°C. Butter and flour a loaf tin well. Set the tin aside.
  2. Place eggs and sugar into the Thermomix bowl. Whip 4 minutes at 37°C using the Butterfly whisk on speed 3.
  3. Add the finely grated lemon zest and juice, EVOO, yoghurt, and lemon oil. Whip 1 minute using the Butterfly whisk on speed 3. Remove the Butterfly whisk.
  4. Add the flour and fold it in using a spatula until just combined. Pour the batter into the prepared tin. Bake for 40 minutes or until a skewer inserted into the center comes out clean.
  5. Cool the cake in the tin for at least 10 minutes. Transfer the cake to a wire rack to finish cooling completely before glazing.
  6. To make the glaze, place the butter and icing sugar into a small bowl. Blend by hand, adding lemon juice slowly until you reach a good pouring consistency.
  7. Drizzle the glaze over the cooled cake. Garnish with edible flowers or thinly sliced lemon pieces.
