Description
Make these easy Turkey Sausage Pancake Minis threaded onto skewers with a simple, spicy maple syrup for a quick, protein-rich breakfast or meal prep item.
Ingredients
Scale
- 4 tablespoons unsalted butter
- ½ cup maple syrup
- 1 teaspoon red pepper flakes, or to taste
- ½ teaspoon salt
- 1 cup all-purpose flour
- ½ tablespoon brown sugar
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons sour cream
- 2 tablespoons unsalted butter, melted
- 2 teaspoons maple syrup
- 1 tablespoon olive oil
- 1 pound bulk regular pork sausage
- 13 4-inch bamboo skewers
Instructions
- Melt 4 tablespoons butter over medium-low heat in a small saucepan. Stir in maple syrup, red pepper flakes, and salt. Bring to a boil and cook for 3 to 4 minutes. Remove syrup from heat and set aside, stirring occasionally, for at least 30 minutes.
- Whisk flour, brown sugar, baking powder, and ¼ teaspoon salt together in a large bowl.
- Whisk buttermilk, egg, sour cream, 2 tablespoons melted butter, and 2 teaspoons maple syrup together in a separate bowl.
- Pour the wet ingredients into the flour mixture. Stir gently until just combined but slightly lumpy; do not overmix. Let the batter sit for 10 minutes.
- Heat a large nonstick skillet or griddle over medium heat. Drop teaspoonfuls of batter onto the hot skillet to form 1-inch diameter pancakes. Cook for 1 to 2 minutes, flip, and cook until golden brown, about 1 more minute. Transfer cooked pancakes to a plate and repeat with remaining batter.
- Heat olive oil in the same skillet over medium heat. Form tablespoonfuls of sausage into 1-inch patties, matching the size of the mini pancakes. Cook until patties are cooked through, about 3 minutes per side. Transfer to a paper towel-lined plate.
- Thread 3 pancakes and 2 sausage patties onto each skewer, starting and ending with a pancake.
- Repeat to make remaining skewers. Serve drizzled with spicy syrup.
Notes
- This recipe uses pork sausage; substitute with turkey sausage for a different flavor profile.
- The syrup benefits from resting for at least 30 minutes to allow the flavors to develop fully.
- Do not overmix the pancake batter; lumps are acceptable for light pancakes.
