Ingredients
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional, for spice)
- 4 cups chicken or vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 package (9 oz) cheese-filled tortellini (fresh or frozen)
- 2 cups fresh spinach or kale
- 1/2 cup heavy cream or half-and-half
- 1/4 cup grated Parmesan cheese (plus more for garnish)
Instructions
Sauté Aromatics – In a large pot, heat olive oil over medium heat. Add diced onion and cook until soft, about 3 minutes. Stir in garlic, Italian seasoning, and red pepper flakes. Cook for another minute until fragrant.
Build the Broth – Pour in the broth, diced tomatoes (with juices), and tomato sauce. Add salt and black pepper. Stir well and bring to a gentle simmer. Let it cook for 10 minutes to blend flavors.
Cook the Tortellini – Add the tortellini to the pot and let them cook according to package instructions (usually about 5 minutes for fresh tortellini or 8 minutes for frozen).
Add Greens & Cream – Stir in the spinach or kale and cook for 2 more minutes until wilted. Reduce heat to low and pour in the heavy cream. Stir gently to combine.
Serve & Garnish – Remove from heat and stir in grated Parmesan cheese. Ladle into bowls and top with extra Parmesan. Serve hot with crusty bread or a side salad. Enjoy!
Notes
- Make it Spicy: Add more red pepper flakes or use spicy Italian sausage instead of plain broth.
- Dairy-Free Option: Swap out the cream for coconut milk or leave it out for a tomato-based version.
- Protein Boost: Stir in shredded chicken or cooked Italian sausage.
- Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently and add a splash of broth if needed.
This Tuscan Tortellini Soup is the perfect balance of indulgence and comfort—quick to make and absolutely delicious! Enjoy your cozy bowl of Italian goodness. 🍲 🇮🇹
